Cupcake Recipe Of The Week~Miss Pinky the Pig

I just finished up designing a pink a orange cupcake party collection, so I thought I should share these adorable Pinky the Pig cupcakes!!

Pinky The Pig Cupcakes

2 jars maraschino cherries
1 package white cake mix
1 cup sour cream
1/2 cup vegetable oil
3 egg whites
1/4 cup water
1/2 teaspoon almond extract
red food coloring
1 container cream cheese frosting
48 small gumdrops
white decorating icing, mini chocolate pieces, mini chocolate chips, and red sugar

Preheat oven to 350 and mix all ingredients including finally chopped cherries, bake for 14 to 18 minutes and let cool.

Make half standard size cupcakes and half mini cupcakes

1. Frost cupcakes with food colored frosting
2. Place mini cupcakes upside down, off centered, of each standard cupcake. Frost mini cupcakes
3. Use gumdrops for ears, chocolate pieces for eyes and create nose with chocolate chips and sugar.

Buttercream Frosting
1 cup butter
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon meringue powder
1 tablespoon milk
1 package powdered sugar
